Pani Puri Recipe 

Ingredients:

For the Puris:

- 1 cup semolina (sooji)
- 1/4 cup all-purpose flour (maida)
- A pinch of baking soda
- Water for kneading
- Oil for frying

For the Pani (Spicy Water):

- 1 cup mint leaves
- 1/2 cup coriander leaves
- 2-3 green chilies
- 1-inch ginger
- 1 small lemon, juiced
- 1 teaspoon roasted cumin powder
- 1 teaspoon black salt
- Salt to taste
- 2 cups water

For the Filling:
- 1 cup boiled and mashed potatoes
- 1/2 cup boiled chickpeas
- 1/2 cup finely chopped onions
- Tamarind chutney (sweet)
- Sev (crispy chickpea noodles)

Instructions:

1. Puris:
   - In a mixing bowl, combine semolina, all-purpose flour, baking soda, and a pinch of salt.
   - Gradually add water and knead to form a firm dough.
   - Cover with a damp cloth and let it rest for 20-30 minutes.
   - Divide the dough into small balls and roll them into flat discs.
   - Heat oil in a deep pan and fry the discs until they puff up and turn golden brown. Remove and drain excess oil on paper towels.

2. Pani (Spicy Water):

  - Blend mint leaves, coriander leaves, green chilies, and ginger with a little water to make a smooth paste.
   - Strain the paste through a fine sieve to extract the juice.
   - Mix the juice with water, lemon juice, roasted cumin powder, black salt, and regular salt. Adjust flavors to your taste. Refrigerate the pani for at least 30 minutes to allow the flavors to meld.

3. Filling:
   - In a bowl, mix boiled and mashed potatoes with a pinch of salt.
   - Add boiled chickpeas and finely chopped onions. Mix well.

4. Assembling:
   - Gently tap the top of each puri to make a small hole.
   - Fill each puri with the potato-chickpea mixture.

5. Serving:
   - Arrange the filled puris on a plate.
   - Dip each puri into the chilled pani and place them on a serving plate.
   - Drizzle tamarind chutney over the puris.
   - Sprinkle sev on top for that extra crunch.
