Idli shaped Dhokla
To make Idli-shaped Dhokla, you can follow a traditional recipe for Dhokla batter and use an idli mould for shaping.
Here's a basic recipe of Idli Shaped Dhokla
Ingredients:
- 1 cup gram flour (besan)
- 1/2 cup yogurt
- 1 tablespoon semolina (sooji)
- 1 teaspoon ginger-green chili paste
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 teaspoon sugar
- 1 teaspoon fruit salt (eno)
- 1 tablespoon oil
- Water as needed
For Tempering:
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- A few curry leaves
- 2-3 green chilies (slit lengthwise)
Instructions:
Prepare Batter: In a bowl, mix gram flour, yogurt, semolina, ginger-green chili paste, turmeric powder, salt, sugar, and oil. Add water gradually to make a smooth batter (similar to Idli batter consistency).
Steam the Dhokla: Grease the Idli moulds. Add fruit salt to the batter and mix gently. Immediately pour the batter into the idli moulds, filling them about 3/4th full. Steam for about 10-12 minutes or until a toothpick inserted comes out clean.
Prepare Tempering: Heat oil in a small pan. Add mustard seeds and let them splutter. Then add sesame seeds, curry leaves, and green chilies. Sauté for a minute.
Assemble: Once the dhokla is steamed, let it cool for a bit. Then gently remove the Dhokla from the moulds.
Tempering: Pour the tempering over the Dhokla evenly.
Serve: Cut the dhokla into pieces and serve with green chutney or tamarind chutney.
This method essentially uses the traditional Dhokla batter but shapes it using an Idli mould for a different presentation.
