               Kolhapuri Misal Pav is a beloved traditional Indian snack originating from the city of Kolhapur in Maharashtra, India. Ingredients:

For Sprouts:
- 1 cup mixed sprouts (moong, matki, moth)
- Water for soaking

For Tarri (Gravy):

- 2 medium-sized onions, finely chopped

- 2 medium-sized tomatoes, finely chopped

- 3-4 cloves of garlic, minced

- 1-inch piece of ginger, minced

- 2-3 green chilies, finely chopped (adjust according to spice preference)

- 1 tablespoon Kolhapuri Misal masala (readily available or homemade)

- 1 teaspoon red chili powder (adjust to taste)

- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil

- Coriander leaves, chopped for garnishing

For Assembly:

- Farsan (mixture of sev, chivda, and other crunchy snacks)
- Chopped onions
- Chopped coriander leaves
- Lemon wedges
- Pav (bread rolls)

Instructions:

1. Preparing Sprouts:

   - Wash and soak the mixed sprouts in water for 6-8 hours or overnight.

   - Drain the water and tie the sprouts in a muslin cloth for around 6 hours, allowing them to sprout.

2. Making Tarri (Gravy):

   - Heat oil in a pan, add chopped onions, and sauté until they turn golden brown.

   - Add minced garlic, ginger, and green chilies. Sauté for a couple of minutes.

   - Add chopped tomatoes and cook until they soften.

   - Add Kolhapuri Misal masala, red chili powder, turmeric powder, and salt. Cook the masala until the oil separates.

   - Add water to achieve the desired consistency of the gravy (tarri). Let it simmer for 10-15 minutes.

3.Assembling Kolhapuri Misal Pav:

   - Take a serving bowl. Start with a layer of sprouts.

   - Pour the hot tarri over the sprouts.

   - Top it with a handful of farsan, chopped onions, and chopped coriander leaves.

   - Squeeze some lemon juice for extra tanginess.

   - Serve Kolhapuri Misal hot with pav on the side.
