Recipe: Upma
Ingredients:
- 1 cup semolina (sooji/rava)
- 1/4 cup chopped onions
- 1/4 cup chopped carrots
- 1/4 cup green peas (fresh or frozen)
- 1-2 green chilies, finely chopped (adjust according to your spice preference)
- 1-inch piece of ginger, finely chopped
- 1 sprig of curry leaves
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 2 tablespoons oil or ghee
- 2 and 1/2 cups water
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Instructions:
1. In a dry pan, roast the semolina (sooji) over medium heat until it turns slightly golden and releases a nutty aroma. Remove it from the pan and set it aside.
2. In the same pan, heat oil or ghee over medium heat. Add the mustard seeds and cumin seeds. Let them splutter.
3. Add the asafoetida (hing) and curry leaves, followed by chopped green chilies and ginger. Sauté for a minute.
4. Add the chopped onions and sauté until they turn translucent.
5. Mix in the chopped carrots and green peas. Cook for a couple of minutes until they are slightly tender.
6. Add 2 and 1/2 cups of water to the pan and bring it to a boil.
7. Reduce the heat to low and slowly add the roasted semolina (sooji) to the boiling water, stirring continuously to avoid lumps.
8. Stir in salt to taste. Mix everything well, ensuring the semolina is evenly cooked and absorbs the water.
9. Cover the pan with a lid and let the Upma cook on low heat for 4-5 minutes, allowing it to steam.
10. Once the Upma is cooked and the water is absorbed, turn off the heat and let it sit for a couple of minutes.
11. Garnish the Upma with freshly chopped coriander leaves.
12. Serve the hot and flavorful Upma with lemon wedges on the side. Squeezing lemon juice over the Upma adds a refreshing and tangy flavor.
