Recipe: Rajasthan Kachori

Ingredients:

For the Outer Dough:

- 1 cup all-purpose flour (maida)
- 2 tablespoons ghee or oil
- A pinch of baking soda
- Salt to taste
- Water as needed to knead the dough

For the Filling:

- 1 cup yellow moong dal (split and skinned mung beans)
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1/2 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to your spice preference)
- 1 tablespoon ginger-green chili paste
- 1 tablespoon oil
- Salt to taste

Other Ingredients:
- Oil for deep frying

Instructions:

1. Prepare the Outer Dough:
   - In a mixing bowl, combine all-purpose flour, ghee or oil, baking soda, and salt.
   - Gradually add water and knead the mixture into a smooth and firm dough. Cover it with a damp cloth and set it aside while you prepare the filling.

2. Prepare the Filling:
   - Wash and soak the yellow moong dal in water for about 2 hours. Drain the water completely.
   - In a pan, heat oil and add cumin seeds and fennel seeds. Sauté until they release their aroma.
   - Add asafoetida, turmeric powder, red chili powder, ginger-green chili paste, and salt. Mix well.
   - Now, add the soaked moong dal to the pan and sauté for a few minutes until it is cooked and becomes a dry mixture. Ensure the dal doesn't have any excess moisture. Let the filling cool down.

3. Shape and Fill the Kachoris:
   - Divide the prepared dough into equal-sized balls. Roll each ball into a small disc with a rolling pin.
   - Place a spoonful of the cooled moong dal filling in the center of the disc.
   - Carefully bring the edges of the disc together and seal the filling inside, creating a stuffed ball.

4. Fry the Kachoris:
   - Heat oil in a deep pan for frying.
   - Gently slide the stuffed kachori into the hot oil and fry on medium heat until they turn golden brown and crispy.

5. Serve and Enjoy:
   - Remove the fried kachoris from the oil and place them on absorbent paper to remove excess oil.
   - Serve the hot and crispy Kachoris with green chutney or tamarind chutney, and savor the delicious blend of flavors.
