Recipe of Crispy Golden Samosa

Ingredients:

 For the dough:

   - 2 cups all-purpose flour

   - 4 tablespoons oil

   - Water (as needed)

   - 1/2 teaspoon salt

- For the filling:

   - 2 cups boiled and mashed potatoes

   - 1 cup peas

   - 1 teaspoon cumin seeds

   - 1 teaspoon ginger-garlic paste

   - 1 teaspoon garam masala

   - 1 teaspoon coriander powder

   - 1 teaspoon chili powder (adjust to taste)

   - Salt (to taste)

   - Oil for frying

Steps:

1.Prepare the Dough:

   - In a bowl, mix flour, salt, and oil. Rub the oil into the flour until it resembles breadcrumbs.

   - Gradually add water and knead into a firm dough. Cover it with a damp cloth and let it rest for 20-30 minutes.

2.Make the Filling:

   - Heat oil in a pan. Add cumin seeds and let them splutter.

   - Add ginger-garlic paste and sauté for a minute.

   - Add peas and cook for a few minutes. Then, add mashed potatoes, garam masala, coriander powder, chili powder, and salt. Mix well and cook for 5-7 minutes. Set aside to cool.

3.Assemble the Samosas:

   - Divide the dough into equal-sized balls. Roll each ball into a thin oval shape and cut it in half.

   - Take one half and form a cone by folding and sealing the edges with water.

   - Fill the cone with the prepared potato filling and seal the open edge by pressing it firmly.

4.Frying the Samosas:

   - Heat oil in a deep pan over medium heat.

   - Carefully slide the prepared samosas into the hot oil and fry until they turn golden brown and crispy.

   - Remove the fried samosas and place them on a paper towel to drain excess oil.
